My guess?

I'd say it flips up so you can open the door of the noble (or whatever other car is loaded) safely and escape the trailer. Then you just flip it down before you drive away (carefully so you don't smash mirror)

His collection also includes a Caterham, Ferrari 360, supercharged NSX, and a few others. I think he has an Ultima as well, but I'm not sure.
